2 Boneless Pork Chops
2 Cloves Garlic
2 TBSP Jam (Use what you have Fig is amazing)
Dry pork chops and season all over with salt and pepper.
Heat a pat of butter in a medium pan. Add pork and cook 4 – 5 minutes per side until chops are browned and cooked through. Once done, move to a plate, cover to rest.
In the same pan, add a bit more butter and melt. Add garlic and cook 30 seconds until fragrant. Stir in stock concentrate, jam, and 1⁄4 cup of water. Cook 3 – 5 minutes until thickened and glossy. Turn off heat and stir in 1 TBSP of butter until melted.
Return pork to the pan and turn to coat in sauce. Add chops to the plate and drizzle any remaining sauce on top.
