Casseroles Chicken

Penne Pork Sausage Parmesan

Ingredients

1 Long Green Pepper (Bell Pepper)
2 Coves Garlic
6 ounces Penne Pasta
6 ounces pork sausage mix (link to pork sausage recipe)
1 small can tomato paste
2 ounces cream cheese
4 ounces shredded parmesan
Butter, Salt, Olive Oil


Bring a large pot of salted water to boil.

Wash and dry produce. Core and dice green pepper into medium-sized pieces. Peel and finely chop the garlic. Heat a drizzle of oil in a large pan over medium-high heat. Add green pepper and season with salt. Cook stirring, until browned and slightly softened (4 – 5 minutes).

Once water is boiling, add pasta, cook to dente (9 – 11 minutes). Reserve 12 cup pasta water, then drain.

Once green pepper is slightly softened, add garlic to pan, cook 30 seconds or so until fragrant. Add sausage and cook breaking up meat into pieces, until browned and cooked through (4 – 5 minutes). Stir in tomato paste and cook for 1 minute.

Stir 12 cup plain water into pan with sausage mixture. Simmer until thickened (3 – 4 minutes). Reduce heat to low and stir in sour cream, half the parmesan, and 1 Tbsp. butter until melted and combined. Season with salt to taste.

Add drained pasta to pan with sauce; toss until thoroughly coated. Season with salt to taste. I like to add a few red pepper flakes as well. If it is a little thick, add a splash of the pasta water stirring in between.

Divide pasta between bowls and top with remaining cheese, basil or parsley to your liking.

Pairs well with Garlic Bread, Broccoli, or a fresh salad.
