Ingredients
4 – 5 (12 ounces) medium potatoes
Salt & Pepper
3 Tbsp. Butter
Dice potatoes into 1⁄2 inch pieces.
Place potatoes in a medium pot with a pinch or two of salt. Add enough water so the potatoes are covered by 2 inches of water.
Bring to a boil and cook until softened (10 – 12 minutes).
Reserve 1⁄2 cup of the potato cooking liquid. Then drain the potatoes.
Return to pan or serving bowl, add butter, and season with salt and pepper.
Use potato masher to mash the potatoes adding splashes of the potato cooking liquid gradually until potatoes are creamy. Taste and add more salt and pepper to your liking.
